Appetizer: Tasting bruschettes in field bread, salmon tartar with mango roast beef with onion marmalade and smoked cheese with berries.

Entry: Turkey roll stuffed with applesauce and walnut praline, with garden sprouts and lemon gel.

Sorbet: Late Harvest with melon.

Main: Grouper fillet crusted pistachios, accompanied by homemade pebre with touches of passion fruit and corn pastry.

Dessert: Bitter chocolate sphere filled with watermelon mousse with touches of basil.
